About Us-   All chickens are not created equal!
      We are a small family farm dedicated to providing our customers with the best product we can, in the healthiest way that we can, for both people and the earth. We do not use anti-biotics nor growth promoters in any of our poultry or egg producing hens. All animals are allowed outdoors and are treated humanely with respect. No cages, no antibiotics, free roaming in pastured paddocks, sheltered when indoors in uncrowded conditions.  Our specialty is poulet rouge type chicken. We start with a direct French heritage breed and raise it according to strict standards for cleanliness and health practices. These birds take a lot longer to raise than your average pastured broiler. The longer length of time to their harvest period accounts for the more intense chicken flavor. They are also moved daily on pasture to give them access to fresh grass each day. Their additional feed rations besides bugs, and grass, consist of all vegetarian feed with added flax seed. Flax seed increases Omega 3. The chickens are also given fresh dairy products to increase intestinal flora and calcium, thus better health.

    This type of chicken has long been a favorite of  Chefs. When compared to your standard "broiler type" chicken that you buy in grocery stores, you will see the difference in body conformation. Their legs are a lot longer, the meat is darker, the breast is smaller and the skin is a lot thinner with lots less fat. Upon tasting the poulet rouge chicken you will immediately notice a difference in taste and texture. The texture of the meat is firmer, the taste is slightly more intense.  There is not much fat under the skin, rendering it much more crisp. The natural qualities of these birds plus the extra care in managing them is what constitutes them as being called poulet rouge type chicken. Try one in a side by side taste test and you will see the difference for yourself. And you thought all chickens tasted alike!
      
    Our  ducklings and geese are a wonderful change for entertaining or for Thanksgiving. We grow two varieties of ducklings. The
Grimaud/Pekin is a larger type of "Long Island" duckling with up to 40% more meat than a standard Pekin duck. If you don't like duck because of the fat that they  usually have, we suggest that you try one of our Barbarie/ Muscovy ducklings.  They have more meat and less fat than regular ducks and a delicious,  rich  flavor.
